Mexican Cheeses

I am sure you have noticed them in the store. Recently I spent some time in California. And while there I was exposed to some mexican cheeses. I liked the Queso Fresco cheese; salty mild to no flavor and easy to crumble. Melts well when used in casserole, or enchiladas. We tried another cheese, but I can't remember the name it was more yellow than the queso fresco and had a richer flavor. Super good. I also tried Mexican sour cream; very tasty a little bit more sour and runny. It is fabulous with fish taco's and a little lime juice. 

One of my favorite combinations is on tostadas. 

Here is my Tostada recipe:

2 can's of black beans, choriso cooked together. 

I usually add butter and a teaspoon of cilantro.

Queso Fresco crumbled

Sour Cream

tomato's or salsa

tostadas ( hard corn tortillas)

Spread a thin layer of sour cream on the tostada. Sprinkle queso fresco on top. add tomatoes' and or salsa. Spread black beans on top. 

It is super quick and easy to make.  About 10-20 min for the beans, and how ever long it takes you to assemble your tostada. I have found this to be quite addictive. You can serve with your favorite spanish rice, lettuce, cabbage, mango or papaya. 

I have found that most of the cheeses are mild and fresh tasting.

All free crochet

In the past I have crocheted. (not very well, mostly stuff that did not turn out even that I never wore) But I was thinking the internet must have some vido's and maybe seeing how to do something would really help me. And it did! I have been watching tutorials on All Free Crochet  

Now I am addicted. Even with our car broken I have taken to walking the 2 miles to Hancock Fabric for yarn. It is probably good there is no where closer. Or I would be going far more. 

So Far I have mastered the Basket Weave and The crocodile stich. Both look cool and are super easy to do. Yeah for a new fun Hobby!

Stairs and sentences

I now have to watch Calvin closely. He was out on the back steps playing with Felix when I noticed he wasn't there any more. I quickly went out side to see if I could find him. And there he was at the top of the steps smiling and very happy with himself. Now every time he gets outside he crawls immediately up the stairs and goes for the plants on the back porch. 

Felix is now talking in 5 to 7 word sentences. It is very cute. So far my favorite sentence has been "Poky puppy, where is?" 

Sometimes they are so cute I just don't know what to do with them ;)

When it rains it pours

So, this weekend the car broke down. It is possible that the timing belt broke. Which could possibly be the end of the Camry. We are currently waiting for our tax return so we have money to take it into the shop. Then yesterday while I was cleaning up the kitchen I notice a nasty smell. Then I saw that the sink was full of nastyness. So I looked up how to fix it online, did all the steps I could and no change. So We talked to the landlord and someone should be coming by to fix it today. My house has a funky nasty smell. And yesterday my phone speaker was not working. I have not had any calls today so I am not sure if it is working again. A minor problem, but really inconvenient yesterday.

One the bright side everyone is healthy, Justin has a job, we are both in school and live close enough to bike walk or take a bus, we have great family, and our kids are dang cute. So in reality there is more good going on than bad in our lives.

Happy Easter!

Eggs! 

Felix really loved finding the eggs. 

Finally he was able to pick up and play with them. It was a great day.

Chocolate eggs are also very good as well :)

Calvin also had a fun Easter celebration. He is just growing so quickly!
