Chatty Kathy

In the last week Felix has really begun to talk. He has added new words to his vocabulary like cars and crackers. I am so excited to actually be able to communicate with my son! It is still a lot of guess work, but it is nice to know exactly what he wants occasionally.

Gluten Free Sweet Potato and Tapioca Cookie Recipe


Katherine made this and it was really really really good.

4 medium sweet potatoes
1 15-ounce can black beans, rinsed
1 tablespoon extra virgin olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
3/4 teaspoon salt

1.Prick Sweet potatoes with fork and Bake at 425 until tender in the center (about an hour)
2.Heat beans, oil, spices, and salt in a small saucepan over medium heat
3.put the beans on the sweet potatoes and top with sour cream and cilantro

And it is really really really good. 

Also I got this super good cookie recipe from my aunt. 

Tapioca Cookies
1 1/2 cubes butter, soft
cream with 3/4 cup white and 3/4 cup brown sugar
1 tsp vanilla
1 tsp salt
1 tsp baking powder
2 1/4 cups tapioca flour

add nuts, chips what ever flavor your want.

bake 350 degrees 10-15 minutes.

In the cookies I had there were crasins, white chocolate and I think macadamia nuts. The cookies are a bit crispy, but taste so good. I really liked to eat them with a glass of milk. 

And I did made fudge yesterday, sadly no grocery store in the area had mint chips, so I ended up with chocolate fudge with pecans. Seriously no mint chips?!!? I am super super sad and will have to get some when I am in Utah next. So I am still craving mint cookies and cream fudge. Oh Sweet Afton's how come you are in Utah? I suppose I could just order some from them online... 
maybe if I get desperate enough. 
Oh I also e-mailed them to see if I could get there recipe. No luck there. Oh well...

Ready to be done...

Ok, I still have more than two months to go, but I am done. I am uncomfortable, tiered and constantly hungry. 
Also, I have decided that women who love being pregnant are crazy. 
The only things I like about it are that my skin problems go away (Although this time I have a little bit of discoloring above my lips making it look like ai have a mustache. Super awesome right!) 
I am just getting antzy and feeling like I want to start a million projects. I really liked when I was pregnant with Felix, I had Halloween, Thanksgiving and Christmas to get ready and do things for. Now I feel like I am coming up with useless things to fill my time with. Like seriously I have been on this cooking and baking thing. I may make fudge today. In fact I think I will

Outside!

Felix's new word is "Outside". He runs up to the back door and will say "outside?" And how can you say no to a request as cute as that? So we will go out for a while and play. He is really enjoying playing with the soccer balls. He likes to pick them up run for a bit with the ball then throw it on the ground and kick the ball.


The outdoors is one of his favorite places to be. Hopefully the rain will stop soon so we can go back outside to play!

PlayDough!

Well since I am home sick today. I have felt bad not doing a lot of fun things with Felix, so I thought it would be fun to make some home made playdough. I found this cool website, http://www.playdoughrecipe.com/ that has a bunch of different recipes. I am either going to go with the traditional or the no cook one. I have not decided which yet.

Curious to see how my latest project is going...







I finished painting Squirt yesterday and re-worked Mike and Sully. I also got started painting sully. I can not believe how close I am to being finished! So far I am very happy with how it has turned out. I have found a few things I want to tweak and fix but I will do that after I get all the characters done.

Photo's from San Fransico and Utah

We visited the San Fransico Botanical gardens. They were beautiful! Along the way we met a very friendly cat. Felix fell in love with it. The cat let him pet it and was very patient with him. THe cat followed us around for a while then left. Felix tried to follow the cat and was very disappointed when we wouldn't let him.

We also met a very friendly squirrel. He was just dying to get a treat!

We took the kids to the Dinosaur Museum at BYU. It was perfect they ran around and had a great time together. I am alway in awe at how big the dinosaurs were.
